Baking Successes and Failures in Quarantine

Since March I’ve done a decent bit of baking, which isn’t all that surprising considering baking is my go-to calming activity. I decided to get creative and try a few new recipes over the past few months.

My biggest success was without a doubt key lime pie. I made it for the first time around my dad’s birthday as its one of his favorite desserts. I was equal parts surprised and proud when it got the seal of approval. A few months later, I made it again for my boyfriend’s birthday and we shared it with his family. The next morning his grandma came to breakfast still talking about the pie, so we’re calling this a real winner. 

I mostly went off Jeremy Scheck’s recipe (originally seen on TikTok but check out his website here) but used a store-bought graham cracker crust and made a teeny adjustment. Here are the full details:

  • Filling:
    • 4 egg yolks
    • 2 cans sweetened condensed milk
    • 1 cup of juice (according to Jeremy, it’s more important to have fresh juice than to have key lime juice. I use all fresh limes and right before it reaches the 1 cup line add in the juice of one fresh lemon)
    • Zest of 2 limes
  • Instructions:
    • Combine ingredients and add to pie crust (I use a graham cracker crust from Keebler)
    • Cook at 350 degrees for 15 minutes
    • Chill overnight
    • Serve & enjoy!

My second favorite quarantine recipe was scones from the Great British Bake Off. As I mention in this Monday Musings post, I watched SO many episodes during quarantine so naturally, I turned to their website for some recipes I could recreate at home. You can check out that post for the full details but TL;DR: will definitely be making these again! 

Another decently successful recipe was these chocolate pretzel blondies, also from Jeremy Scheck. I can confirm they are SO easy to make. My brother loved them, but I’d rather have those flavors in a cookie instead of a brownie.

Now onto the fails: first is Brazilian cheese bread, better known as Pāo de Queijo (see reference picture here). I spent so much time trying to fix the batter to get these right and eventually they puffed up a little but they just did not come out right. Some of my friends have had success making these, but I’ll stick to purchasing them for now.

Last but not least is not a fail per se, but not my favorite recipe either. I attempted this healthier banana bread with ricotta but it was too dense and just fell short for me.
